Recipe: Pico de Gallo (& News Flash!)

Happy Daylight Savings!

I don't know about the rest of you, but I loved seeing Houston in the daylight when I drove home today!  Sunshine peeking through the trees?  Yes, please!

I'm not looking forward to another Texas summer, but I'm like a flower Chia pet.  I need sunlight!  It's time to gear up for spring and summer!

Today I have the easiest recipe that will be so useful for BBQs, parties, bonfires, and all other social gatherings!  Skip the additives and preservatives in store-bought brands, and make your own pico de gallo!  

Because it's so easy, and it's far healthier.  
And I said so... though I'm sure that doesn't carry much clout.

Pico de Gallo
Adapted from what my mom told me to do three years ago.  :-)


4 tomatoes, diced
1/2 yellow or red onion (1/3 if it's a large onion), diced
4 tablespoons cilantro, chopped
4 limes, juiced
1 teaspoon sea salt

 Mix first three ingredients.
Add lime juice and stir.
Sprinkle sea salt and stir.
Optional: Season to taste with pepper and/or minced garlic.
Refrigerate for 2 hours before serving.

 (I had enough to fill a 24 oz jar and then some.)

 Enjoy with carrots, sliced bell peppers, cucumber slices, or chips!  Happy snacking!

And I am so loving this time change. I mean I hate it when it's time to get out of bed, but I love that night time doesn't start until around 8! yes!

Annnnd this stuff looks amazing.
I love dips - hummus, salsa, guac...so I definitely need to try this!
